There's a secret to selecting perfectly ripe avocados: look for slightly blackened ones that give just a little when you press on their skins.

2 large ripe avocados, peeled, pit removed, and mashed
1/2 chopped onion
2 medium jalapeno chile peppers, seeded and chopped
2 Tbsp minced fresh parsley
2 Tbsp fresh lime juice
1/8 tsp fresh ground pepper
2 medium tomatoes, finely chopped
1 medium garlic clove, minced
1 Tbsp olive oil
1/2 tsp salt (optional)


  1. In a large mixing bowl, combine all ingredients, blending well. Cover and refrigerate for at least 1 to 2 hours.
